Move over, kale. Spinach is in season and it's time to revisit that leafy green we all know well but seem to have forgotten about in the kale frenzy.

If you're new to cooking with spinach, the key is to make sure you use the right kind. If a recipe calls for baby spinach, don't swap it with regular or frozen spinach. Certain recipes work better with frozen spinach, like casseroles and quiches. Others, like salads, you should only make with the fresh stuff.
