One of the most popular cakes in Poland, the andrut wafer cake is traditional Polish dessert that is easy to make in just 10 minutes. All of the ingredients required are easily available in any store or online site, and you just need to assemble them together to form the Andrut wafers.

Andrut or andruty kaliskie is a traditional semi-sweet Polish sweet made with layers of wafers filled with kajmak.

According to the ‘Leksykon Sztuki Kulinarnej’ or Lexicon of Culinary Arts by Maciej Halbański, these andruts are very delicate thin wafers baked in round or square iron forms. In the 18th and 19th century these were heated using charcoal, but nowadays gas or electricity is used.

According to the ‘Staropolska Encyclopedia’ written by Zygmunt Gloger, these wafers were originally made in Kalisz in the 18th century and often served as dessert.

Back in 1798 when the City Park was established, stands selling andrut popped up around the entrances and the area around Aleja Waleczne and the Teatralny Bridge. Visiting the park soon came to be associated with eating andrut wafers! Some would also enjoy andrut wafers with a glass of beer!

On December 9, 2005, andruts were entered on the List of Traditional Products by the Ministry of Agriculture and Rural Development.And on April 22, 2009, the Kalisz wafers that are used to make the andrut were entered into the EU register as a Protected Geographical Indication. This means they can only be produced in the city of Kalisz and nowhere else.

Even today, the sweet andrut wafers are not only popular with kids, but with adults too.

How To Make Andrut Polish Wafer Cake

You need kajmak which is cooked condensed milk to make this recipe. If using condensed milk, cook the can in a pot filled with water for a few hours. Then allow to cool, and open.

Divide the cooked can of kajmak into 3 parts. So there will be 3 spreads of kajmak and 1 spread of plum butter.Alternatively, you can use peanut butter. So it will be 2 spreads of kajmak, 1 spread of peanut butter, and 1 spread of plum butter. The choice is yours!

You start by spreading a layer of kajmak on the wafer, cover it with another wafer, followed by another layer of kajmak and another wafer. Next, add a layer of Polish plum butter (powidło) or peanut butter, one wafer, then a layer of kajmak again, and a final layer of the wafer.

Place something heavy on the andrut for a few hours so that it sets. Then cut into diamond shapes and serve!

Ingredients

  • 1 package of wafers
  • 1 jar of plum jam (powidło)
  • 1 can of kajmak OR condensed milk

Instructions

  1. If you have kajmak, go to step 3. You are using condensed milk, go to step 2.
  2. In a pot, cover a closed can of condensed milk with cold water. Bring to boil, then reduce the heat. Cook slowly for 3-4 hours. When the can is cold, you can open it up.
  3. Spread the first layer of the wafer with kajmak/ cooked condensed milk.
  4. Cover with the second layer of the wafer.
  5. Spread kajmak on top.
  6. Cover with the third layer of the wafer.
  7. Spread plum butter (powidło) on top.
  8. Cover with the fourth layer of the wafer.
  9. Spread kajmak on top.
  10. Cover with the final layer of the wafer.
  11. Place something heavy onto the wafer cake. It's ready to eat after a few hours.
