If you caught my recipe for last month, you'll understand why I've been bitten by the Barramundi bug.

If you don't know what the heck I'm talking about, let me give you the 10-second run-down. And then I have to talk to you about the fish and hummus friendship because it deserves a day of celebration to itself.

Barramundi is a firm, slightly sweet, sustainable white fish that is popular in Australia, New Zealand and Southeast Asia. It has been dubbed “The Sustainable Sea Bass” because of its slightly buttery texture.

And the health benefits? Barramundi is low in calories and saturated fat, chock-a-block full of omega-3 fatty acids (the good stuff), and devoid of any hormones, colorants, mercury and PCBs. Not too shabby!

Oh yeah, and my family loves the taste of it. It's a win-win all around.

Now, let's get back to the "hummus crusted" part of the recipe. It's kind of magical in a foolproof kind of way, and I'm wondering why it took me this long to try it.

In this recipe, I mixed plain hummus with some fresh dill, but feel free to use any flavored hummus that you enjoy...roasted red pepper, roasted garlic, curry hummus...I'm pretty sure even hummus mixed with old shoe would taste good in this recipe.

Smear the hummus on top of the fish and top it with panko breadcrumbs for a fantastic golden brown crunch.

Hook, line and sinker. I'm sold.

We just did had the humus fish and it was great. One for the favorite column. I have a Hummus I found that is lower in calories and we love it -Oasis brand roasted red pepper. This would work with any fish I think. I broiled for a minute at the end to brown the panko a bit. Excellent easy and fast. Thank You

Seems like no one in the comments actually cooked the dish? Despite the big ingredients, this dish was dull and flavorless. Its as if the hummus sucked all the flavor from the fish and that flavor was cooked out in the oven, leaving you with only a fishy tasting filet and an awkward semi crust on top. Pretty sure hummus is meant to stay cold because this dish did not impress unfortunately.

FAQs

How to season and cook a fish? ›

Season the outside of the fish generously with a few good pinches of sea salt, black pepper and garlic powder. Roast for 18-20 minutes, or until the fish reaches an internal temperature of 145°F and flakes easily with a fork. (Cooking time will vary depending on the size/variety of your fish.)

How to cook fish without using fat? ›

Grilling and Broiling

They both involve applying dry heat to your food at very high temperatures. The main difference between the two methods is that grilling applies heat from below and broiling applies it from above. Both methods are a fast way to cook really tasty fish without adding any fats.

Should fish be covered or uncovered when baking in the oven? ›

Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.

Should fish be baked uncovered? ›

The fish cooks well in a humid environment. This cooking, in fact, uses the cover of a sheet of tin foil or baking paper that hermetically closes the baking pan or wraps the fish completely so as to retain moisture. The sheet must then be removed halfway through cooking to facilitate browning.

Do you put olive oil on fish before seasoning? ›

Season both sides of the fish (since the salt doesn't get absorbed after frying) and drizzle the filet with olive oil (don't be afraid to keep adding more!), continuing to season with salt and pepper along every step of the way.

Is fish better in pan or oven? ›

Baking or Frying? Of course, the better option will always be baking over frying. Baking removes the concern of adding extra fats since it doesn't require oil or grease to cook the fish. There is another unique benefit to baking over frying.

Should you cook fish in oil or butter? ›

Butter has a higher fat content, so it will provide more moisture and flavor when cooking fish fillets. Olive oil has a lower fat content but is packed with healthy monounsaturated fats and vitamins, so it's a great choice if you're looking for a healthier option.

What is the tastiest way to cook fish? ›

If you have thin fillets, you can pan fry them in butter and lemon. Thicker fish, like salmon, you can bake in a hot oven. You can bread fish, baste with teriyaki sauce, blacken them. What is the secret of cooking fish so it's moist, tender, and tasty instead of dry?

How to make food crispier in oven? ›

Keep the oven shut as much as possible to reach cooking temperature faster. Use a perforated sheet tray. This helps hot air circulate more easily among the fries, increasing crispness. Don't thaw your fries before baking.

How do you crisp soggy fried fish? ›

Put the fried fish in the oven and broil for one to three minutes on each side. Make sure to watch the fish as it heats. You don't want to burn the outside before the inside is thoroughly reheated. Your leftover fried fish will be ready to eat when it reaches an internal temperature of 145 degrees Fahrenheit.

How to make fish crispy on outside? ›

Pan-searing to achieve a crispy skin is one of the most delicious and quick ways to cook a piece of a fish! To nail shatteringly crunchy skin every time, you just need dry skin, hot oil and press down lightly to help the skin contact heat as it cooks.

How do you keep fish crisp? ›

place wire rack in the cool aluminum foil pan or steam tray, place hot fish out of the paper bags, then place fish ontop of rack. Cover fish on a rack with paper, paper bags or wax, or parchment paper. Fry up all of your fish ahead of time.
