How can you turn peanut butter and jelly into a healthy breakfast? With this delicious strawberry peanut butter steel-cut oatmeal recipe!

Every single morning when Pat leaves for work, he brings me half a slice of toast with peanut butter and half a slice of toast with strawberry jelly. He uses the all-natural kind, which should be my favorite but ISN’T, but it’s still a sweet gesture.

He’s a simple guy who loves breakfasts that are very simple, so it’s perfect for him. He’s never been one for my off-the-wall breakfast ideas, he just doesn’t get it. So every morning I get half of his toast so that he gets some peanut butter and some jelly. Easy, but sweet. I actually have started to look forward to it!

With our wedding anniversary going up in September, I want to make him breakfast in bed! (Luckily he’s always in trouble for not reading the blog so this is a safe space.) I have to do things his way so he actually likes it, but have to make a couple of twists to make it my own.

Easy Oatmeal Recipe

I know “quick oats” are all the rage these days, but let me fill you in on a little secret: ALL OATS ARE QUICK! These amazingly delicious Steel Cut Oats from Bob’s Red Mill took 17 minutes to cook to creamy dreamy perfection. Everybody has 17 minutes, you can do it! They’re so much more delicious to me than the microwavable kind.

You can see right on the bag, this oatmeal is WORLD CHAMPION OATMEAL, and that means something! You can be proud spending those 16-18 minutes preparing a delicious and hearty breakfast for your family!

What is Steel Cut Oatmeal?

So what’s the difference between oatmeal made with steel-cut oats vs. rolled oats?

The main difference in the types of oats is how they are processed. I won’t bore you with the technical details, but steel-cut oats have a lower glycemic index, which means they take longer to digest. This means you’ll feel fuller longer, which is exactly what you want from a healthy breakfast!

So this PB&J steel-cut oatmeal recipe is the perfect thing to fill you up in the mornings, so you don’t get hungry before lunchtime hits.

How to Make Peanut Butter and Strawberry Oatmeal

This Peanut Butter and Jelly Steel Cut Oatmeal will be an instant favorite. Packed with chopped peanuts, creamy peanut butter, sliced strawberries, and of course ribbons of strawberry jelly, it makes mornings worth waking up for!

Plus this strawberry peanut butter oatmeal is super easy to make, so there’s no hassle in the mornings. Just good, healthy, tasty food.

  1. Pour 4 cups of water and 2 cups of oats into a pot, and bring it to a boil on the stove.
  2. Stir in the milk and salt, reduce heat, then cook for 16-18 minutes while stirring often to get it to your desired consistency.
  3. When it’s done, turn off the heat, and stir in the peanut butter. Then stir in the strawberries, and then the peanuts.
  4. Finally, stir in the strawberry jelly. You can mix it in fully if you want, but I like using a knife or squeeze bottle to swirl it in so it’s not fully mixed in. When you bite into a pocket of jelly, it tastes just like biting into a peanut butter and jelly sandwich!
  5. Top each bowl off with some sliced strawberries and peanuts to make it extra beautiful.

A quick 20 minutes and you’ve got the best peanut butter and strawberry oatmeal recipe. Yum! This is a healthy breakfast your kids will enjoy too. Just tell them it’s PB&J in a bowl, they won’t know the difference.

Ingredients

  • 4 cups water 908 grams
  • 2 cups Bob's Red Mill Steel Cut Oatmeal 352 grams
  • 1 cup whole milk 227 grams (or skim milk)
  • 1 teaspoon kosher salt 3 grams
  • 1 cup creamy peanut butter 270 grams
  • ¼ cup chopped peanuts 38 grams, plus more for garnish
  • cups diced fresh strawberries 251 grams, plus more for garnish
  • ¼ cup strawberry jelly 85 grams

Recommended Equipment

  • Bring a pot with the water and oats to a boil over medium-high heat.

    2 cups Bob's Red Mill Steel Cut Oatmeal, 4 cups water

  • Stir in the milk and salt and reduce heat to low. Cook for 16-18 minutes, stirring often, until the oatmeal is the desired consistency.

    1 cup whole milk, 1 teaspoon kosher salt

  • When the oatmeal is just how you want it, turn off the heat. Stir in the peanut butter until fully combined. Stir in the diced strawberries and chopped peanuts.

    1 cup creamy peanut butter, 1½ cups diced fresh strawberries, ¼ cup chopped peanuts

  • Stir in the jelly a little at a time, using a knife or spoon to swirl ribbons with the jelly. I used a squeeze bottle and swirled it around as I incorporated it. You don't want it fully mixed in, the pockets of flavor make it taste more like peanut butter and jelly.

    ¼ cup strawberry jelly

  • Serve immediately topped with more sliced strawberries and chopped peanuts, if desired.

Becky’s tips

  • Use skim milk to cut down on calories and fat.
  • To freeze, pour the oatmeal into the wells of a muffin tin and freeze until solid, about 1-2 hours. Transfer to an airtight container or Ziplock bag to store.

Storage:Store peanut butter and jelly steel cut oatmeal in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 2 months.
