2 days back I happened to attend this “Meet and Greet” event organized by WE (Women Entrepreneurs Foundation), organized in Bangalore.

It was some time that I had attended an event like that. So I had my share of nervousness on how the event will be.

I had registered, and when the invite came in, my first reaction to it was, “I don’t think I will go”.

Then, we had this casual discussion – me and Dilip. And I asked him if I should go (I gave him a few hundred reasons for not going).

After listening to me, Dilip said. “You have so many reasons to not go. What’s the one reason you think you should go. If that is strong, then forget about all these other things and just go”.

While that motivation did something, it wasn’t really enough to convince me fully. At that point, Dilip said, “Go and attend. The worst that will happen is you will not gain anything”.

I felt he was right. What’s the worst that could happen?

I went in.

And probably that was one of the best decisions I ever made.

The event was extremely informative and organized well, and helped me know a lot many other similar women who were all into some kind of entrepreneurial venture.

You know what’s the big problem with a lot of us?

We don’t really give the value of a “real business” to whatever we are doing, especially when it doesn’t involve going into an office and spending time in meetings. The word “entrepreneur” sounds scary to us.

And I was able to break that comfortable cocoon that I was living in.

I was able to network, meet other women entrepreneurs, share my thoughts and learn from them.

The best part was that I was able to find help – help on things that I was struggling with.

The Women Entrepreneurs Foundation is doing a fantastic job of bringing together women entrepreneurs and helping them find support.

They organize these kinds of meets in some of the metro cities and if you are anywhere in these cities and an entrepreneur, I would recommend that you attend these meets.

There were a few things that I learnt during this entire episode.

The fear of the unknown, often keeps us away from exploring new and better things.

This fear is because we are so comfortable in our cocoons that we fear that anything outside it will be uncomfortable and hence we prefer staying inside.

Break open the cocoon and come out to see how beautiful things are outside.

And I will never forget that one statement from Dilip – You might have a hundred reasons for not doing something.

But if you have a single reason for doing it, that is more powerful that these hundred, then you will do it.

Enough of the rambling. Onto this week’s recipe.

Wheat Based Paneer Roll also called paneer wrap is a combination of Indian bread(roti) stuffed with some paneer and veggies. The best part of this recipe is that you can make it with leftover parathas as well. This high-protein recipe is very easy to make and can be packed for the kid’s lunch boxes. This quick recipe can also be served as a snack and as a main course.

Ingredients

  • 3 Onion thinly sliced
  • 1 Tomato ‌finely chopped
  • 1 Capsicum sliced
  • 6-7 pods Garlic crushed
  • 1 inch Ginger crushed
  • 1 tbsp Coriander Powder
  • 1/4 tsp Turmeric Powder
  • 1 tsp Garam Masala Powder
  • Red Chilli Powder to taste
  • Hing a pinch
  • 1 tsp Amchur Powder
  • 1 tsp Kasturi Methi
  • 2-3 tbsp Oil
  • 1 Small Carrot grated
  • 2-3 Green Chilli chopped
  • 4 tbsp mayonnaise
  • 2 tbsp Sauce
  • 300 gms Paneer

Instructions

  • Heat oil in a pan over low flame.

  • Add onion and saute until it turns light brown.

  • Add ginger-garlic paste and saute until the raw smell of ginger garlic goes off.

  • Add a pinch of hing and stir.

  • Now add turmeric powder, coriander powder, chilli powder and garam masala powder.

  • Saute on low flame until the spices turn aromatic.

  • Now add tomato and salt to it, stir well.

  • Cook until the tomatoes gets well cooked and the oil separates.

  • Now add paneer and capsicum, give it a nice mix.

  • Now add amchur powder and kasturi methi and cook for about 2-3 minutes. (do not over-cook otherwise the crunchiness of capsicum will go)

  • Once done, turn off the flame.

  • So the stuffing is ready.

  • In a bowl add mayonnaise and tomato sauce and mix well. Set aside.

  • Place one paratha and spread the mixture of mayonise and sauce evenly.

  • Now put one portion of filling in the center and spread it lengthwise.

  • Top with some sliced onion, grated carrot and green chilli.

  • Also top with some more mayonnaise to make it more creamy.

  • Now roll tightly, ensuring the stuffing does not come out.

  • So the paneer roll is ready to be served.

Notes

To make roll, it is good to make big paratha’s.
